A few words about White Blend
Blending (assemblage in French) is the process of mixing together different cultivars to obtain a balanced, harmonious wine, taking the best from each cultivar (for freshness, acidity, body, sugar level...)
Blending takes years to master and it is always a difficult task to maintain consistency over different vintages (since the quality or ripeness of the grapes can change drastically from one year to another...)
A popular white blend in South Africa is the Sauvignon-Semillon, but many others can be found such as the Chenin Blanc, Roussanne, Grenache Blanc, Viognier, Verdehlo, Chardonnay and Sauvignon Blanc used in the infamous Adi Badenhorst White Blend.
