A few words about Red Blend
Blending (assemblage in French) is the process of mixing together different varietals to obtain a balanced, harmonious wine, taking the best from each varietal (for freshness, acidity, body, sugar level...)
Blending takes years to master and it is always a difficult task to maintain consistency over different vintages (since the quality or ripeness of the grapes can change drastically from one year to another...)
The most popular South Africa blends are the Bordeaux blend (usually Cabernet Sauvignon based) and Rhône Blend (Shiraz based).
