A few words about Cape Classique
Cape Classique is not a cultivar as such, but rather a type of wine. The method used in South Africa, known as MCC (Methode Cap Classique) is similar as the one used in France to produce Champagne (bottle-fermented, no adjunction of gas), the name being different for trademark reasons. Cultivars used in South Africa are mostly Chardonnay and Pinot Noir, and MCC can either be white or rosé, vintage or not (NV).
